POSITION TITLE: Golf Course Food and Beverage Manager

DEPARTMENT(S): Parks and Recreation

REPORTS TO: Golf Course Clubhouse Manager

POSITION SUMMARY:

This is a management, exempt position in the Parks and Recreation Department. An incumbent in this class has significant operations and maintenance experience and training in the food and beverage (F&B) business. The F&B Manager has knowledge in all food and beverage practices, local and state food and alcohol laws and permits, personnel management, budget/forecasting, financial management, member relations, and related record-keeping. Reports to the Department Director through the Clubhouse Manager, this position must be an energetic individual with an enthusiastic attraction to consistency while remaining open to innovation.

POSITION DUTIES:
Each position in this classification may not include all the duties listed below, nor do the examples cover all duties that may be performed.

Under General Supervision:

  • Coordinates activities of food preparation and snack bar personnel.
  • Purchases and/or requisitions of all food and kitchen supplies.
  • Continuous practice of cost and quality comparisons.
  • Plans menus, prepares and apportions food, utilizing food surpluses and leftovers.
  • Markets and promotes food and beverage services.
  • Specifies number of servings to be made from any vegetable, meat, beverage and dessert to control portion costs.
  • Supervises non-cooking personnel to ensure cleanliness of kitchen and equipment.
  • Supervises and assists in cooking.
  • Tastes, smells and observes food to ensure conformance with recipes and appearance standards.
  • Supervises and assists with inventory, storage and distribution of food items and supplies.
  • Maintains records of all food and beverage costs.
  • Maintains records of hours worked for all F&B employees per month.
  • Provides Clubhouse Manager with a month-end report of all expenses, revenue and tracks employee hours.
  • Assures all employees who serve alcohol secure the appropriate pour licenses.
  • Codes invoices to proper GL budget line item.
  • Hires and discharges food and beverage employees. All new hires, salary and wage rates must be approved by the Clubhouse Manager.
  • Trains new employees in bartender and kitchen duties.
  • Mixes and serves alcoholic and non-alcoholic beverages.
  • Confirms customers are 21 years of age or older before serving alcoholic beverages.
  • Knowledge and ability to train staff to recognize when it is appropriate to stop serving alcohol to customers.
  • Collects money for drinks, food and banquet room rental.
  • Ensures a daily deposit and report is completed and submitted to the office manager.
  • Hires, trains and supervises beverage cart personnel.
  • Recommends all food and beverage prices with approval from Clubhouse Manager.
  • Prepare schedules of all employees, ensuring coverage for all hours of operation.
  • Controls cost of salaries and wages. Overtime pay must be approved by the Clubhouse Manager.
  • Annual evaluations of food and beverage employees.
  • Responsible for covering facilities in the event an employee calls out sick or doesn’t report for work.
  • Meets with staff, customers, or client groups to resolve the menu inconsistencies.
  • Meets with customers for the rental of the banquet room while ensure all policies and procedures are followed in the rental of the banquet room.
  • Responsible for the health check and rating maintained by the Gwinnett County Health Department.
  • Plans menus or arranges for caterers and employees to work for planned events in banquet room or SHGA events.
  • Make sure all tables, bar and counters are cleaned and floors are vacuumed by close of the business day.
  • Wears appropriate attire and shoes based on the dress code standards of SHGC.
  • Maintains a friendly, professional demeanor to the customers.
  • Keeps all work areas clean. All areas must be cleaned before close of each day.
  • Cleans and ensures daily set-up of banquet room daily.
  • Maintain proper hygiene and cleaning fundamentals while working in food and beverage areas.
  • Ensures proper tipping and tip out procedures are completed daily.
  • Makes sure all tabs are paid by the close of day, no carryovers.
  • Restocks all coolers, chip racks and candy as needed at the end of shifts.
  • Work-related issues or problems must be discussed with the Clubhouse Manager.
  • State and Local Alcohol serving hours must be maintained including Sundays.
  • Performs other duties as required.

DESIRABLE QUALIFICATIONS:

Education and Experience – A combination of education and experience that would likely provide the required knowledge and abilities is qualifying:

  • Graduation from high school or possession of a GED
  • 3-5 years experience in food and beverage industry
  • Advance computer skills required for financial reporting and control of operations, including use of Microsoft Office.
  • Valid Driver’s License.
  • ServeSafe and alcohol pour certificates shall be obtained within sixty-days.

  • Physical: Sufficient physical ability to work in a kitchen and bar; work around kitchen equipment and machinery; walk, stand or sit for prolonged periods of time; moderate to heavy lifting and carrying; bending, stooping, kneeling, crawling.
  • Vision: See in the normal visual range with or without correction; vision sufficient to read computer screens and printed documents and to operate equipment.
  • Hearing: Hear in the normal audio range with or without correction.

SUPERVISION:

  • Works under the direction of the Golf Clubhouse Manager or other supervisors as assigned.
  • Supervises all food and beverage personnel, volunteer or otherwise, as appointed by the Golf Clubhouse Manager.

OTHER REQUIREMENTS:

  • Incumbent is subject to drug and/or alcohol testing as mandated by the City of Sugar Hill’s Drug Testing & Substance Abuse Policies.
  • Must be able to perform all essential functions of the job assignment.
  • A current unexpired valid Georgia driver’s license is required.
  • A flexible schedule is required.  Must be available on nights, weekends and holidays as assigned.
